Parmesan Crusted Zucchini

Ingredients 4 medium zucchini 1 Tbsp olive oil to taste salt & pepper ¼ tsp red pepper flakes ¼ cup parmesan cheese METHOD - Shave the zucchini to the core, then heat the oil in a pan (medium heat), sautee zucchini (7 - 10mins) or until bright green, season with salt, pepper and red pepper flakes. Remove from pan and place in bowls; sprinkle with Parmesan cheese before eating. ENJOY
