Recipe Favorite: Carrot & Orzo Salad - SO yummy and fresh! I omitted the parsley (not a fan) and chopped up some cucumber bites instead - a great summer salad. The roasted carrots are delicious and the whole thing comes together pretty quick Ingredients 1 lb. carrots 2 Tbsp olive oil (divided) ½ Tbsp ground cumin ¼ tsp salt freshly ground pepper to taste 1 cup uncooked orzo ⅓ bunch fresh parsley 2 oz. crumbled feta cheese ½ Tbsp lemon juice
Cool Cucumber Salad 1 med. cucumber ¼ cup apple cider vinegar 1 tablespoon chopped fresh dill, plus sprigs for garnish (or your favorite herb) 1 tsp honey 1 tsp lemon juice Salt & pepper to taste Prep: Peel & thinly slice the cucumber. Put the slices in a bowl and set aside. In a separate bowl, whisk together the vinegar, dill, honey, and lemon juice. Pour over the cucumbers and toss to coat. Season with a little salt and pepper. Cover and refrigerate. Serves 1.
