Butternut Squash, Barley, and Cheddar Gratin. Notes: Used 3/4 of a large sweet onion instead of red onion, and sauteed it until caramelized in butter. Added 4 heaping cups of butternut squash, used 2% milk, and added extra cheddar cheese to the sauce. Next time I would top with whole wheat bread crumbs as well. This would be a wonderful freezer meal, too.
