Apple Pie Cookie Bars *NOTE: These are so delicious! I used shortbread crust instead of the cookie crust because I thought the cookie would make it too sweet. Shortbread made it just right. We had an over abundant apple crop so I've made these several times & they are always a winner. For even more eye-rolling goodness - drizzle a little of the homemade caramel sauce over the top. YUM!!
