This is the giant cappuccino cupcake I made for my daughter's 18th birthday party (she's a coffee nut). I used a giant cup cake tin (from Lakeland) and made a basic 14,14,14,7 Victoria sandwich mix with 8 teaspoons instant coffee dissolved in 2 tablespoons boiling water. It took 70 minutes to cook at 150degreesC (fan oven). It's sandwiched with coffee flavour butter cream and Cadbury chocolate finger biscuits. The top is white chocolate buttercream and a dusting of grated plain choc.
