Peach Streusel Pie--I've messed around with this crumb topping a lot. My favorite way to do it is in the food processor with rolled oats instead of flour, cold butter, half the sugar (or use maple syrup), and add a bit of cinnamon. Yum! One thing to note--I don't recommend doubling the recipe this way--the food processor gets too full and doesn't mix well.
Peach Crumble Pie - a compromise desert without the compromise. This was freaking delicious. The crust was really difficult to work with - eventually I gave up and just pressed it into my pie plate - totally worked fine that way. I also added a pinch of cardamom to the filling and the crumble topping.
