Creamy spinach and avocado pasta: 1½ cups small pasta 4 cups spinach ½ avocado ¼ cup olive oil ¼ tsp garlic powder (or onion) 2 tbsp plain yoghurt 1 tbsp Low-Sodium Stock OPTIONAL: 1 tbsp grated cheese Blend spinach with stick blender. Pulse until finely chopped. Add in the avocado, olive oil, seasonings, yoghurt. Set aside. Cook pasta and drain, return to pot and stir sauce through (I added some shredded BBQ chicken too). Serve with sprinkling of grated cheese. Success!
