Why did I make it in the first place?), but I was pleasantly surprised. Unlike most tomato-ey dishes that are runny, squishy disappointments, this one was hearty, flavorful, and very filling. Definitely finish off with some parsley. I just used a regular skillet. No cast iron around here :)
