Feijoa & Lemon Cordial                                             collect the zest from 12 large feijoa (wash them well first), added the zest of half a lemon, placed everything in a pot with 500 ml of water and 100 g of sugar. Boiled the lot for 5 minutes (to dissolve the sugar), then covered with a lid and let it rest overnight. In the morning I strained the 'syrup' and bottled it.

Feijoa Chutney  Ingredient: •	2 cups feijoa flesh •	2 large onions, chopped •	2 cups apple cider vinegar •	1 cup brown sugar  •	1 tbsp salt (optional) •	1 tsp cayenne pepper •	1 tbsp spice powder or curry powder •	½ cup sultanas  Method: Place feijoa, onion, vinegar, sugar, salt, pepper, curry powder and sultanas in a saucepan. Boil until the sugar has dissolved. Reduce heat and simmer for 40 to 50 minutes, stirring until thick and pulpy. Serve.

The excessive amount of fruit on Sophie's tree, which was abundantly covered when we visited, usually finds its way to the preserving pan and into jars each year.  Her recipe, which uses a light syrup and the over-flow method of bottling, is quick and simple to make.  Sophie says when the tree is laden she can bottle up to half a dozen jars before breakfast or after dinner to avoid having to throw any away.
