Great idea for easy morning breakfasts. I'll try freezing these as well so I can pull them out the night before for a easy breakfast the next morning. The changes I'd make to this recipe are: use ground turkey instead of pork ... and maybe add some peas!
These muffins are surprisingly moist, even though they're low in fat, thanks to nutritious, flavorful add-ins like carrots, banana, and raisins.... Yummy! I also tried adding some honey to some, and some chocolate chips to some. Good all three ways! I'm just hoping my kiddo (who is anti-breakfast) likes them too and that they freeze well!
