Recipe - Teriyaki Chicken with Pineapple Ingredients: 1 pound boneless, skinless chicken thighs 1 cup pineapple chunks (fresh or canned) 1/2 cup soy sauce 1/4 cup brown sugar 1/4 cup honey 2 tablespoons rice vinegar 2 cloves garlic, minced 1 teaspoon ginger, grated 1 tablespoon cornstarch 1 tablespoon water Sesame seeds (for garnish) Green onions, chopped (for garnish) Directions: Start by cutting the chicken thighs into bite-sized pieces. In a bowl, whisk together the soy sauce, brown sugar, honey, rice vinegar, minced garlic, and grated ginger to create the teriyaki sauce. Reserve a small amount of the sauce for later use. In a large skillet over medium-high heat, add the chicken pieces and cook until they are browned and cooked through, about 5-7 minutes. Pour the teriyaki sauce over the chicken and stir to coat evenly. Add the pineapple chunks and let the mixture simmer for about 5 minutes, allowing the flavors to meld. In a small bowl, mix the cornstarch and water to create a slurry. Stir this into the skillet and cook for an additional 1-2 minutes, or until the sauce thickens. Remove from heat and drizzle the reserved teriyaki sauce over the chicken and pineapple. Garnish with sesame seeds and chopped green onions before serving. This dish pairs wonderfully with steamed rice or noodles for a complete meal!
