After a weekend of excess cider drinking at Splore, followed by a weekend of beer bloating and over indulging in delicious meals….it’s time for a wee detox. If you’re looking for a healthy, crunchy snack, you can’t go passed kale chips. I am obsessed with them! (I’m actually eating them while typing this) You can use any type of kale to make kale chips – I like to use curly kale for my chips because it breaks off in perfect little portions to cook and you don’t have to cut it!

I also like to make this one with a bit of coconut milk instead of soy milk and serve it with coconut shavings on top.It’s a great afternoon treat!

Last night I made these little balls of deliciousness and they are nothing short of amazing! They taste like peanut butter cups according to my boyfriend….that’s probably due to my obsession with peanut butter and probably adding a little more than the recipe says. :)
