Scones - 4 cups flour, 4 tsps baking powder, 2 cups milk, 4 tbls butter. Combine all ingredients together but try to stir as little as possible. Roll the dough out onto a baking tray and cut into squares and separate. For best results cook at 200C for about 17 minutes. Cool and serve with jam and cream.

Salmon cucumber bites, so easy.  Just top cucumber slices with cream cheese then fold a slice of salmon on top followed by a branch of dill.

Baileys Chocolate Cake - use your favourite chocolate cake recipe and just add 2 tbs of Baileys, especially in the icing.  This is my recipe for icing:   Icing: 2 cups icing sugar, 2 tbs cocoa, 50g softened butter, 2 tbs Baileys. Make sure the butter is quite soft. mix all these ingredients together until it turns into a paste. If you prefer your icing a bit more runny add some milk. Once you are happy with the texture spoon over the chocolate cake.

Raspberry Fool - Great summer time dessert. This is my version of the Raspberry Fool, which is raspberries and meringue pieces served with cream. I found the cream a bit rich, so I substituted it for sweetened greek yogurt and also added marshmallows. Pretty damn tasty if I do say so myself

Jagermeister Christmas Cake:  1kg mixed fruit, 200g unsalted butter, 1 cup water, 395g condensed milk, 1 tbs white vinegar, 3 tbs Jagermeister, 2 cups flour, 1 tsp baking soda, 1 tsp baking powder, 2 tsp cinnamon, ½ tsp ginger, 1 tsp nutmeg, ½ tsp ground cloves. Soak fruit in water overnight.  Put fruit, butter and water into a pan and heat. Let it cool down then add everything else. Cook at 150C for 2 hours. Cover with jam glaze then sliced almonds.
