Red Curry Lentils — Pinch of Yum  I made this for my vegan daughter and s-I-l, and they raved about it...said it was restaurant quality.  It's fairly easy, and I made it early in the day and stuck it in the crock pot to keep warm.  Delicious with brown basmati rice.

Lentil Soup with Chickpeas and Quinoa- I  usually have all these ingred. in the house.   This looks like another healthy meal.

Lentil Soup with Chickpeas and Quinoa (Souvlaki For The Soul)- just made and its excellent! Changes-didnt precook quinoa, it cooked perfectly. I did have to add about three more cups of water so it was a soup and not a stew.

Curried Lentil Soup. The kids even loved this one. Our modifications:  EVOO, as needed. 1 onion, chopped. 1 carrot, finely chopped. 1 large garlic clove, chopped. 1/2 teaspoon (or more) curry powder. 2 cups French green lentils. 6 cups (or more) broth or water. 1 can Eden chickpeas (garbanzo beans), drained, rinsed. 1 tablespoon fresh lemon juice. 1 tablespoon herbamere. fresh ginger, grated.

Curry powders vary in flavor and heat; begin with two tablespoons and add more according to your taste.
