Marinated Cheese and Olives ~ a quick party appetizer or easy food gift in a jar.  This is a perfect appetizer.  Its  not the least bit heavy so it will not interfere with the rest of the meal.  I like to make it up early in the day. I also like to switch out the cheeses and a little lemon zest will go a long way.  Very eye appealing . Be sure to use pitted olives. And Toss Often.

{Peppermint Crunch-Milk Chocolate Chip Cookies} - kids liked them. I don't care for chocolate, or mint --- so I just took a taste and passed after that.  Great Christmas cookie.  I used some broken candy canes instead of the Andes Peppermint Crunch Chips.

French onion soup casserole.  Fabulous recipe. Not just for Holidays. The name tells it all. I pushed the bread down into the onion mixture. I also cut it into small pieces for easier eating. A must make again soon. Perfect way to use up stale bread or rolls.

Coconut Flour Pancakes- made 5-24-12. I increased this recipe by one third, and I was glad I did since it made just enough pancakes for five people. These were tasty and good, with a very slight coconut flavor. The texture is different than white flour pancakes, but all of my kids enjoyed them and cleaned their plates.

Apricot chicken crock pot recipe- made 4-19-12. This was easy to put together, and smelled very good while cooking.  The taste is more of a tangy, faint Asian flare as opposed to the stronger apricot taste I was expecting.  It was delicious! Served with rice for the extra sauce.

Jam Hands: In-N-Out Cheeseburger Copycat. I've never had an In-N-Out burger, but wanted to try this. Made the recipe without any changes. It tasted just as good as the best grilled burgers we  make. The sauce is a basic Thousand Island dressing and reminds me of the dressing on a Big Mac. The sauce is a nice change from ketchup. Served on pretzel buns with sliced tomato and lettuce.

Kale pesto 3/5 it was okay. I prefer basil or spinach pesto to it hands down, though. The kids still ate it up and got seconds though...1/2 cup of nuts, 3 cloves of garlic, 2 cups packed kale leaves (remove tough stems), 3 Tbsp olive oil, good pinch of sea salt and fresh cracked pepper.  Combine everything in a food processor, pulse a few times, scrape down sides, process until itu2019s pesto (refer to photo).

Crustless Spinach Quiche Recipe * This one has been very popular On the Taste of Home Cooks Corner recipe site. It makes its own crust as it bakes. I have used many types of cheese. Including Mexican and 5 Italian blend.  I have even added some chopped mushrooms to the mix.  Its  light, cheesy and it makes for a perfect brunch.  This one has earned a 5 star rating.

I didn't crock pot this recipe, but made on the stop top.  Very good recipe!  I cut the cream cheese in half to cut on the fat, but the flavor was still very tasty.  A-

HEALTHY Chocolate Zucchini Fudge Brownies: these are good but I changed a few things: I used white whole wheat flour instead of coconut, and did half coconut oil half canola oil, and only did a half cup of it. I used Splenda as my sugar. I used her frosting recipe which was good too. They were pretty darn rich but I had a lot of people like them! Great with peanut buttet on top!
