Spiced beetroot chutney
PMK says: Spiced beetroot & orange chutney. After reading recipe comments, I went with 350ml vinegar, and halved the sugar (I did add 200ml water as well). I processed the onion, beetroot and apple to cut down cooking time. It still took over 3 hours to reach consistency, but hot dang it was worth it - this shit is bananas! This made 4 smaller jars, and 3 large. The perfect cheese & cracker accompaniment - will be making again and again.
