Puerto Rican Recipes - Sopa de Salchichon by Denise Recipe used: Sopa de Salchichon by Andrina 1 & 1/4 cups Salchichon (Salami Sausage) adjust according to your liking. 1 cup finely chopped Yellow Onion 1/2 cup diced green pepper, or red, yellow. 1 clove minced garlic Coconut oil (or your oil of choice) 3-4 tablespoons sofrito (I freeze mine in cubes. If you do 1 cube is about 1 tablespoon) Adobo 1-2 bay leafs 1 & 1/2- 2 packets Sazon con culantro or achoite oil Pepper 1-2 cubes Chicken Bullion Pimento stuffed olives 1 can tomato sauce Baby red potatoes with skin on or off 1/4 teaspoon sugar (to balance acidity) Cilantro Angel hair pasta (or preferred pasta choice) 14 cups water (I have boys so had to make a big batch for leftovers!) Directions: Cover pot with coconut oil & saute salchchon (salami) for 5- 7 minutes on medium high heat, add onion, green pepper & saute until onions are translucent. Add garlic, sofrito, tomato sauce, chicken bouillon & seasonings. Add water & potatoes. Cook on medium heat for 30 minutes. Then add noodles & cilantro. Cook for 8-10 minutes. | Facebook
