red lentil curry in a skillet with limes and cilantro on the side
Classic One-Pot Red Lentil Curry
This Classic One-Pot Red Lentil Curry is seriously a vegan staple! When it comes to vegan proteins, lentils might not have the same excitement factor as those over-hyped supermarket faux meats, but this humble little legume brings a whole lot of goodness to this curry. Of course, all the other ingredients here lend a helping hand—the spices, the tomatoes and onions, the coconut milk, the lime. Everything comes together to create a dish you’ll want to make (and eat) again and again.
one pot easy sweet potato curry with white rice in a bowl and on the side
One-Pot Easy Sweet Potato Curry
You know I love a good curry and it seemed about time to add a Sweet Potato Curry to the repertoire. It’s been an idea that I’ve had for a while now, so the anticipation was definitely building. One of my top tips for making this Sweet Potato Curry is to ensure all your sweet potato pieces are the same. I like to cut them into 1-inch pieces, that way they cook evenly and aren’t too big (not bite-size) and aren’t too small (so they don’t become mushy). I also wanted the onions to be pretty small.

Healthy Walnut Lentil Bolognese
Healthy Walnut Lentil Bolognese is so delicious. Plus, replacing the meat with lentils makes is so incredibly good for you! The hearty lentils and the buttery walnuts do a great job of replicating the meaty flavor of a traditional bolognese. And they pair so well with the rich, deep flavors of tomatoes, tomato paste, veggie broth, and wine. Bolognese is a meat-based sauce that is made with beef, and sometimes some pork as well. Not this recipe though, this walnut lentil bolognese is vegan!
vegan pad see tew with broccoli and noodles in a white bowl
Vegan Pad See Ew
This vegan pad see ew is a plant-based version of the Thai favourite! Rice noodles, vegetables, and chewy tofu are tossed with a sweet, savoury, and slightly tangy sauce for a restaurant-style meal at home. Going to a Thai restaurant is a tricky proposition for vegans. Even the menu items that look vegan often have shrimp paste or oyster sauce or some other hidden non-vegan ingredient in them. Luckily, you can make a lot of your favourite Thai dishes at home which is so convenient.

Peach Bellini
This peach bellini recipe is fun, fruity, and fancy. It’s a perfect cocktail to have with breakfast, or while sitting outside on a warm day. You all know I’m a big fan of well-balanced cocktails, and this peach bellini is exactly that. Real peaches make this cocktail fruity and rich, while Prosecco makes it feel like a party. It’s fresh, sweet, acidic, and bubbly … what more could you want in a cocktail? I love drinking these peach bellinis in place of mimosas with Sunday brunch.
