In honor of Father’s Day this month, I wanted to make my dad’s favorite rice recipe: Moro de habichuelas rojas, made with Carolina’s Jasmin rice. 

Moro de habichuelas is a staple in Dominican cuisine. It’s easy to make and tastes delicious. Using Carolina’s Jasmine rice elevates the dish as it is fluffy and flavorful. 

 

Ingredients:

Carolina jasmine rice 
Red beans
Garlic 
Peppers 
Onion
Tomato sauce. 
Cilantro 
Culantro
Oregano 
Chicken bouillon 
Oil 
Salt 
 

Instructions:

First rinse your rice before cooking. I like rinsing it until the water is no longer cloudy. In a hot pot add some oil, and some chopped onions. 1/2 cup Achiote oil 
1/3 cup fresh sofrito
1/4 cup olives 🫒 optional
1/4 cup chicken bullion
1 tablespoons Dominican oregano
1 tablespoons black pepper 
1/2 tablespoon salt 🧂 
2 cans of pigeon peas or beans 
4 1/2 cups rice 
7 cups of water 
Do the little spoon standing up test 
If you can make spoon stand up 
You have enough water 💧

Cover rice once water is completely evaporated, cover cook for 35-40 minutes without lifting the lid, the foil paper is optional. To make rice:

🇩🇴 longaniza (cut in pieces and fry)
Add 1 can @iberiafoods gandules
2 tablespoons sofrito
1 tablespoons adobo
1/2 tablespoons Sazon
1 teaspoon black pepper
1/2 tablespoons Dominican oregano
Chopped onions, and peppers
Garlic & olives 
Tomato sauce or paste 
Lil bit of my uncle @tapatiohotsauce 
Chicken bouillon or salt to taste
Half a lime
Fresh cilantro
2 cups rice (cleaned) 
2 1/2 cups of water
