Pumpkin Deviled Eggs 🥚
Ingredients • 5 hard-boiled eggs • 2 tablespoons pumpkin puree • 1⁄2 teaspoon chipotle chili powder • 1⁄8 teaspoon coarse salt • 2 tablespoons olive oil mayonnaise • 1 teaspoon Dijon mustard • 1⁄2 teaspoon paprika • 2 scallions, chopped Step 1 Boil eggs, let cool and peel. Slice eggs in half lengthwise and gently remove yolk. Step 2 • Mix yolk with remaining ingredients, excluding scallions. Pipe into egg whites, scoring lines with a toothpick if desired to make egg yolks look like pumpkin rinds. Use chopped scallions as “stems” and serve.
