The thought of having salad for breakfast is not very western, but with the advent of green smoothies I see this as a natural progression, instead of making your greens into a smoothy why not just eat them in their whole state.  Create this salad then serve with couple of poached eggs, some seeded pesto and homemade relish.  It’s better then just rocket on the side and adds a different flavour to breakfast.  Enjoy
