Bacon and pea macaroni and cheese. A quick, delicious weeknight meal that my hubby and I enjoyed. I used turkey bacon and rice pasta so it was a little "healthier" (but still used cheese, lol), and doubled the recipe to make it last longer.

Thai Chopped Chicken Salad: made this for dinner. Few changes: used 2 chicken thighs (marinaded overnight and grilled), added a handful of chopped cilantro to the salad, doubled the dressing and peanut sauce.
