I've been doing this for years. To help not cut all the way through, lay a wooden spoon alongside the potato and cut until you hit the spoon handle. Fan the potato slices out a bit and add olive oil (I sometimes also drizzle a little melted butter too), Italian herbs, Mrs Dash Garlic and Herb, and any others that you like.
