Microwave Sponge Cake (Here the recipe that I use.) Mix the following ingredients well in a large microwave-safe mug that hold around 2 cups: * 1 egg * 1/4 cup sugar * 1/2 tsp vanilla -OR- * 1/4 tsp vanilla and 1/4 tsp almond extract * pinch sea salt * 2 TBSP Self-rising Flour Microwave on high for 1 minute and 30 seconds. It will look a little glossy. Do NOT overcook.
Microwave meringue: 1 egg white + 300g of icing sugar. Separate egg white and mix in sugar till it forms a mouldable dough. Shape into small balls and place on plate. Ensure enough space around them as meringues' expand in microwave. 3 balls per batch. Bake in microwave about 30 seconds or till meringues don’t expand anymore. Take care not to burn. Let cool and enjoy.
