Zucchini Pineapple Bread- delish! A very forgiving bread. I substituted half the oil with applesauce and flax seed, also used Egg Beaters instead of eggs. It is still moist and yummy! Even fairly good for you can taste good! Will definitely be making again and again (work week breakfasts!!)
Pineapple Coconut Zucchini Bread: in the oven right now. Batter tastes delicious. :D Swapped 1/2 cup of the oil for half a cup of cinnamon applesauce. Sprinkled some toasted shredded coconut on top for extra coconut flavor.
