Leek & Caerphilly crumble tart I made this with Wensleydale as couldn't find caerphilly. Very nice. I made it in a 25.5 cm tin. Mixture came to top of pastry case. Too much topping! Probably cut quantity in half. But will definitely make again - very popular with everyone who ate it!
Blue Wensleydale cheese is handcrafted made in North Yorkshire, England. Made from cow's milk, and is a variation of Stilton cheese but more firm. It is matured six months and lightly pressed for only 24 hours before being wrapped in muslin cloth. It is a hard, blue-veined cheese, with a mellow and less salty taste appeals to newcomers and cheese connoisseurs.

1/5/14: Cheese board - made a great cheese board last night for a party. Used honey goat cheese, white extra sharp cheddar, yellow sharp cheddar, camembert, wensleydale with cranberries, merlot bellavitano for the cheeses (something for everyone) & added italian dry salami & proscuttio, then finished off with dried apricots & fresh raspberries (and crackers obviously) IT WAS A HIT!
Stichelton is an English blue cheese. It is similar to Blue Stilton cheese, except that it does not use pasteurised milk or factory-produced rennet. Randolph Hodgson of Neal's Yard Dairy and American Joe Schneider produce Stichelton in small batches in a dairy at Cuckney on the northern edge of Sherwood Forest, Nottinghamshire.
