RASPBERRY PROTEIN PANCAKE MUFFINS, 1 cup Kodiak Power Cakes Pancake Mix 45g vanilla whey protein powder 1/2 cup baking stevia (or sweetener of choice) 3/4 cup water 3/4 cup nonfat plain Greek yogurt 1 whole egg 1 tbsp. coconut oil, melted 1/2 tsp. vanilla extract 3/4 cup raspberries, fresh or frozen
1 banana (frozen preferably) 1 scoop of vanilla whey protein powder 1/2 cup 1% milk or skim plus milk (may also use soy or almond milk) 2 Tbsp natural unsweetened cocoa powder (such as Hershey's) 4-6 ice cubes
PROTEIN MUG CAKE 1 Scoop vanilla whey protein powder (I use Body Fortress) 1 Tbsp unsweetened cocoa powder 1 tsp sugar or sugar substitute (I use Truvia baking blend) 1/4 tsp baking soda pinch of salt 1 egg white 2 Tbsp almond milk 1 Tbsp peanut butter (optional) Mix all the dry ingredients in a mug until well blended. Add in the egg and almond milk and mix until smooth. Add PB if using. Microwave for around 1 minute on high.
