Texas Tornado Cake ~ It is a copycat recipe based on a popular dessert served at Duff’s Famous Smorgasbord buffet-style restaurants during the 1980’s and 1990’s... It’s a sweet and super moist cake that is packed with fruit and topped with a walnut and coconut icing!
2 cups Fruit, canned; 2 Eggs; 1/2 c Evaporated milk, canned; 2 cups All-purpose flour; 2 tsp Baking soda; 1 c Brown sugar, packed; 1 1/2 c sugar; 1 c Coconut, sweetened flaked; 1 cup Nuts; 8 tbsp Butter 325° oven. Grease/flour 9x13 glass pan. Mix: sugar-bak. soda low til combined. Spread in pan. Mix br. sugar & nuts sprinkle top. Bake 40-45 min til cake firm middle. Icing: med. saucepan: med high heat boil 2 min. low-keep warm/stir til cake baked. Pour on top hot cake. Cool, cut in squares.

This Cake is made with a can of fruit cocktail in the batter, then before you bake the cake you sprinkle a streusel topping with nuts over the top. After the cake comes out of the oven you add a boiled coconut topping and pour it on the cake while hot. Oh, soooo scrumptious!
