Easy Skillet Sweet Potato Frittata - This was delicious. I didn't use the red onion because I had some large spring onions and I really enjoyed the mild flavor. I also cooked bacon in the iron skillet before and used a little bit of the grease instead of the butter. Additionally, I used a shredded cheddar blend on top in lieu of parm because I had it. And I also used about a TBSP of sour cream and about two TBSP of cottage cheese because it's what I had on hand. It turned out really well.
