Homemade Keto Chile Relleno-I roasted the chiles on my gas stove until they turn black. Placed in closed paper bag for 2 min, then gently shake to loosen the skin. Using a butter knife, or your hands, slide the skin off. Cut a 3" slit and carefully turn inside out to remove the seeds. Stuff with shredded cheese and shredded pork (I cooked pork in my pressure cooker with southwestern marinade) Dredge in egg, & crushed pork rinds. Top w/ more cheese, Bake @ 425 for 5 min, then broil for 3 min.
