Had an unexpected extra hour today and needed some lunch. So I whipped this up really quick and tossed it onto a wrap with some spinach, mushrooms and peppers. So much better than the store bought stuff!!
3 garlic cloves, 1 Tbsp. of lemon juice, 1 Tbsp. of olive oil, 1 can of drained and rinsed chickpeas, 1/4 cup of plain yogurt or 2 Tbsp. tahin, 1/4 tsp. salt, 1/8 tsp. pepper, your choice of spices (paprika, fresh parsley, cumin…), process everything until smooth, add a little water if needed for smoother consistency
Made this with greek yogurt and added leeks (since I got some from my Amish friend) Sally's Crazy Mixed-Up Salt and fresh ground pepper blend. Eating it with fresh snap peas from another friend's garden. YUM for a fat free, crunchy snack.
