Skate with Capers and Brown Butter

Skate with Capers and Brown Butter "Long a French favorite, skate is becoming increasingly popular with American cooks as they discover just how moist, succulent and flavorful it is. Ours is a classic French preparation—poached with herbs and sauced with a combination of pungent capers, vinegar and mellow browned butter. Boiled potatoes are the classic accompaniment."

Cyclobatis is an extinct genus of stingray-like skate from the Upper Cretaceous of what is now Lebanon. The genus is typified by a circular form, hence the prefix "Cyclo-," meaning "wheel-like," and the presence of an extremely short tail.

Like sharks, skates have skeletons of cartilage rather than bone. This big skate is found off the Pacific coast of North America and can reach a length of about 8 feet.

Ahhhhhh Back Yard Ramps... build it and they will come. Takes me back to my buddy Matty's killer ramp, 24 foot wide with extensions and a spine. Night Skatin was invented on that ramp in Sandy Bay. Stay tuned for pics... they're on the way. Don't know who this dude is but, what a mega 'Stale Fish' air SkullyBloodrider.
