Creamy Mushroom Soup/this soup was amazing! I used coconut milk instead of half and half to keep it dairy free. I used a 50/50 mix of baby bella and shitake mushrooms, added garlic in when sauteing onions and carrots and used fresh thyme. Also instead of using water I used my homemade chicken bone broth. YUM!!
