Gray Matter. The butterfly shape of the gray matter consists of the dorsal (posterior) and ventral (anterior) horns. The left and right sides are attached by a gray commissure, which has the central canal in the middle. The posterior root has sensory nerve fibers entering the posterior horn. Mammals know their own mothers through all their senses. When a human baby is immediately taken from its birth mom & handed over to an adoptive mom, the baby is confused & disoriented. She doesn’t pass the 'sensory test'. The new mom doesn’t sound right, or smell right, or feel right, or have the right resonance or energy. The baby becomes dis-regulated. Maintaining the freshness of coffee is critical to preserving taste, especially as coffee is often sent home with customers. This fact led the SCAA to acknowledge a need for sensory testing within the coffee industry as with customers. This work was conducted as a joint effort between the SCAA and the Roasters Guild due to interest expressed by the membership. Together, the groups focused on answering some fundamental, taste-based questions.
