Sausage Muffins (12 muffins) 1 lb. breakfast sausage, cooked and drained 5 large eggs 1 C. bisquick 4 oz. diced green chilies, drained 1/4 C. diced pepperoni 3/4 C. shredded mozzarella cheese 3/4 C. shredded sharp cheddar cheese Beat the eggs in a mixing bowl, add the sausage and remaining ingredients, stirring to combine well. Spray a 12 cup muffin tin with cooking spray and fill each cup with the muffin mixture. Bake in a 375 degree oven for 20-25 minutes.
Sausage and Cheese Breakfast Muffins. Made these on 9/8/13 and they are SOOOOO good. I will definitely make them again, but with more cheese for sure, and possibly more sausage. Even my 1 year old likes them.
