Roasted cod with basil pesto. Just made and ate this and it rocks! Super simple and easy to do. We used our own pesto, small tasty tomatoes in slices, panko breadcrumbs, and then added a bit of grated parmesan on top. I will definitely do this dish again! Done in 15 minutes total!
Cod works really well for this recipe, as it has nice firm flesh, but you can use any white fish. Make sure the fillets are all about the same size so they cook evenly. This couldn’t be easier to prepare but tastes really special. It’s so good you won’t miss the chips.
