This roast is cooked to medium rare; it comes out of the oven at 120° and reaches 130° to 135° as it rests before carving. If you like your meat cooked to medium, roast it to 130°. This is the EASIEST way to make a roast. I did this last year and it was the tastiest prime rib EVER. The key is to multiply the weight of your roast by five (4lb x 5 = 20). Use that number to roast at 500 degrees and then TURN OFF THE OVEN and walk away!
