Braised chicken thighs with button mushrooms by Emeril. (I use boneless skinless thighs and sometimes breasts...adjust cooking time.) My favorite chicken recipe. I like mine extra spicy So I use lots of cayenne. I also think he recipe needs more salt. But oh my this is delicious! Amy approved. It's good on steamed veggies, too, so you can skip the rice.
