AMAZING FORGOTTEN CHICKEN--1-1/2 cups brown rice, uncooked; 2 cans cream soup (1 mushroom & 1 chicken); Chicken (hindquarters work well….or frozen chicken breasts—yes, you can use them frozen!); Onion soup mix to sprinkle on top. Mix uncooked rice with both cans of soup. Spread into bottom of 9x13 pan. Lay chicken on top of rice. Sprinkle dry onion soup mix on top of chicken. Cover pan. Bake, covered, for 2 hours in preheated 350 oven.
