I like to soak those babies in buttermilk and hot sauce for extra tenderness and then deep fry them until they are extra crispy. Great recipe for Chicken hearts and gravy. This is something my grandmother used to make only using chicken gizzards . Gizzards and hearts seem to be hard to find these days at my supermarkets so I take what's available. I've also done this with chicken necks
