Shrimp with White Beans, Spinach, and Tomatoes - made 1/16 with mods. Nice - lighter version of the bean/sausage recipe we do. Add spinach at the very end. Cooked the shrimp in the skillet first and set aside, then used the same skillet for the recipe. Subbed borlotti beans (& their canning liquid instead of chicken stock), canned tomato, and parsley. Added sriracha (which S didn't like), cayenne, and red pepper. Would make again.
