Simple Spinach Parmesan Quiche :: 1 prepared pie crust for a 9 inch 1 cup milk 2 eggs, beaten 1 1/2 cup cheddar cheese, shredded 1/2 cup fresh parmesan cheese, shredded 1 10oz package frozen spinach, thawed and drained 1/2 teaspoon salt 1/4 teaspoon pepper
You can cook these mini quiches in advance and keep them in the refrigerator until you need them, heating them in the oven to keep the pastry crisp. You could also microwave them but then they might get a bit soggy. This delicious recipe features cream, cheddar cheese, spinach and more, for a really good flavor, and these mini quiches make excellent finger food.
Spinach and Bacon Quiche from Paula Deen. I use 1 cup milk and 1/2 cup cream to lighten it up. Also, I add a little chopped onion,1/4 cup cheddar cheese, and a pinch of cayenne pepper. I also use frozen spinach vs. fresh, and you can sub ham if you don't have bacon. Delicious!
