I made this 5-Ingredient Quinoa Pizza Crust last night and it was great! I used applesauce instead of olive oil and kept it vegan by topping it with lots of veggies and nutritional yeast. I also just used my silicone baking mat to cook it by spreading the batter out evenly and it cooked great. YUM!
Quinoa Pizza Crust: Just soak 1 cup uncooked quinoa in plenty of water for 8 hours. Drain. Put quinoa in blender with some salt and blend with a little water till it's smooth and has a pancake batter consistency. Bake at 450 degrees for 8 minutes, flip and bake 6 minutes more. Top with your favorite pizza stuff and bake till everything's hot and melty.
