Vankaya Gasagasala Kura / Eggplant Poppy Seeds Curry -- looks so decadent yet prep is relatively simple. Besides the spices, this uses poppy seeds for the gravy. Subbing with tahini/cashew nuts since I can't get poppy seeds. Also thinking of roasting the eggplant slices instead of frying them for a heart healthy version.

Sichuan Eggplant. I should have made this a long time ago. One of my favourite dishes to order in Asian restaurants. So simple to make and flexible with substitutions. I am going to make this all the time! I almost ate the whole batch on my own in one sitting!
