Pignoli or Pine Nut Cookies. these taste like almonds or marzipan. if you like that almond-y taste, you will love this super soft, chewy cookie. they are one of my favorites. also, if pignoli nuts are too expensive for you, I suggest dipping them in lightly toasted sliced almonds. this will help keep the cost down. either way, pignoli nut or almonds, these cookies are out of this world. enjoy!
