[Whole 30] ---- Stuffed Mushrooms:: 4 large portobello mushroom caps, 1 Tbs bacon fat, 1/2 minced red bell pepper, 1/2 minced small yellow onion, 1 lb. ground pork, 2 c spinach finely chopped, 1 minced clove garlic, 1 tsp sea salt, 1 tsp fennel seeds crushed, 1/2 tsp ground sage, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1 tsp dried parsley.

Stuffed Portobellos

Portobello mushrooms are delicious and easy to stuff with almost anything. This is fast and easy to make! Rub portobellos with olive oil, salt, pepper, drop in egg, and other desired seasonings. Bake at 350F until egg white sets. (note, i use draining pan/rack when baking mushrooms b/c of excess moisture mushrooms release when baking)
