Paleo Peach Cobbler | Filling: 8 C fresh peaches, peeled and sliced (about 10 peaches); 2 T lemon juice; 2 T arrowroot powder; 2 T honey; 1 tsp vanilla extract; 1 tsp cinnamon; ¼ tsp nutmeg; Pinch of sea salt | Topping: 1½ C blanched almond flour; ¼ C coconut flour; 1 T baking powder; ½ tsp sea salt; 4 T grassfed butter, chilled and cut into small pieces; 3 eggs; ¼ C honey; ⅔ C full-fat coconut milk; 1 T coconut oil, melted
paleo peach cobbler muffins. LF note: just made these. They are great! I used butter instead of coconut oil and inserted a square of cream cheese into 2 of the muffins. I also used Natures Hollow sugar free maple syrup instead of honey, and it needed a tiny bit more sweet, so sprinkled Swerve on top after cooking/tasting.
