On the eve of releasing his exciting new cookbook Plenty More (out Thursday September), Ottolenghi takes us on a magical tour of his personal cookbook collection.

This recipe has almost reached the sphere of mythology, due to the anticipation involved every time Yotam goes to Israel, before he comes back with a bag full of jars containing his mother’s famous mayonnaise. Well here it is, the legendary recipe, and it makes the best addition to a grilled chicken and tomato sandwich  (p 273, The Ottolenghi cookbook)

I've had @ottolenghi's cookbook Plenty for awhile and these roasted eggplants have been crying out to me from the cover ever since.  I finally made them and now I'm wondering why I waited until the end of pomegranate season to try them because now I want to eat this pretty much every day. Something to look forward to for next year.
