Mini cheesecakes with Nilla wafers! Place a nilla wafer on the bottom of cupcake liners. blend together 2 8oz pkgs softened cream cheese, 3/4c sugar, 3 eggs, 1t vanilla, 1T lemon juice, zest of 1lemon. scoop mixture on top of wafers and bake 20min in 350deg. cool, chill. scoop a spoonful of cherry pie filling on top of each mini cheesecake and serve
