I subbed zucchini instead of yellow pepper, I added white wine and oregano to the vegetables and instead of using a pesto sauce I seasoned the chicken breast with salt & pepper and added sundried tomatoes on top. I baked it for 30 minutes covered and 30 uncovered. So tender!***
